Minestrone Soup
 large onions
 tablespoons garlic
 large green peppers
 cans (15 oz) kidney beans
 quarts water
 large carrots
 quarts crushed tomatoes
 cups small pasta
 cups sliced pepperoni    pinch of oregano
   pinch of basil    

---- For spicier soup------
** chop up cherry peppers to taste

Cut the Onions and Green Peppers into small pieces, slice the Carrots and chop up the sliced Pepperoni. In a 12 QT pan sauté the Onions and Green Peppers with 2 teaspoon1 of Garlic, then add the Kidney Beans, Water and Carrots. Boil until Carrots are cooked. Then add the small Pasta, Pepperoni, Basil and Oregano.

Add the Cherry Peppers if desired.
