Crazy Cake

This cake uses no eggs and is mixed in the baking pan. It has been referred to as a Depression Cake.

Soak 1 cup of dates in hot water to soften.
Into a 9 X 13 ungreased pan sift the following:

3  cups flour
2  cups sugar
1  teaspoon salt
2  teaspoons baking soda
1/3  cup cocoa

Make 3 holes in the dry mixture. Into the 1st hole add:

1  teaspoon vanilla
Into the 2nd hole add:
3/4  cup liquid oil
Into the 3rd hole add:
2  Tablespoons vinegar

Using the drained water from the dates and add water to yield 2 cups. Pour over mixture. Blend with a fork. DO NOT BEAT. Add dates. Sprinkle chocolate chips over the top. Bake at 350°F for 40 to 50 minutes.

Why vinegar in a cake recipe?


Vinegar is an acid, and it reacts with the baking soda to start a chemical reaction that makes the batter rise as it bakes. This is especially important when there are no eggs in the recipe.

Dont worry, though, you won't taste the vinegar in the finished product!
