Scotch Oatmeal Cookies

cup raisins or dates*

eggs
3/4
cup water
2
cups quick cooking oatmeal
1
teaspoon baking soda
2
cups flour
1
cup shortening
1
teaspoon salt
1
cup sugar

Combine raisins or dates and water in a pan, cook for 5 minutes. Drain into container. Measure 5 tablespoon. of the juice and combine with the baking soda. Cream the shortening and sugar, beat in the eggs. Stir in the oatmeal, salt and cooked drained raisins or dates. Add juice and baking soda mixture. Stir in flour. Drop by spoonful onto a greased cookie sheet. Bake at 350°F for 10 to 12 minutes.

*nuts or coconut may be added for variations.
