Wash beans in strainer under running water, drain. Place beans in a large saucepan, add enough water to cover 2 inches above the beans. Soak overnight. Drain beans. Dice ham, chop the onion and celery, mince up the garlic, and add to the beans. Add 2 Qts. of water and spices. Cover and bring to a boil over medium high heat. Reduce heat and simmer for 1 1/2 hours or until beans are tender. Cut up the tomatoes and add the liquid from them and simmer 30 minutes longer, stirring occasionally.
