Cudighi
Cudighi is an Italian style sausage that is popular in the Negaunee/Ishpeming Michigan area. It’s rarely heard of outside that area, except by all the Method family and in-laws that brag about it and bring it back with them.
  Ingredients

  Lean Pork Butt (ground pork over
       the counter will work)
1/2 t
2 t
  Black Pepper
1/2 t
2 t
  White Pepper
1/2 t
2 t
  Nutmeg
1/4 t
1 t
  Mace
3 T
1 cup
  Salt
1/4 t
1 t
  Cloves
1/4 t
1 t
  Allspice
5 T
1 cup
  Dry Wine
1/2 t
2 t
  Garlic Powder

(Note: the spices are a bit generous)

Mix all together, let stand at least 2 hours. Do not use an aluminum container. If you have all your ingredients lined up, it might take you all of 10 minutes to make 5 pounds of mixture! Make up patties whatever length you want. I found very little shrinkage in frying. I like this recipe so much, I doubt if I will every buy cudighi again. It freezes very well.
