Oatmeal Pancakes or Waffles

2/3  cup pancake mix (highly recommended: We use
        Bob’s Red Mill 10-Grain Pancake and Waffle mix
        available at the Wedge)
3/4  cup buttermilk
1/4  cup milk
1  egg
1/8  teaspoon Vanilla
1/3  cup quick-cooking oatmeal
1  tablespoon oil (I use olive oil)
1/8  teaspoon soda

Mix together pancake mix, oatmeal and soda. Add to other ingredients and mix. Let stand 5 minutes.  Add fresh blueberries and bananas on top of the almost ready to flip pancakes on the griddle, once flipped press on the pancake lightly with a spatula to push the fruit into the pancake and flatten the surface of the pancake.
