Bechamel Sauce (White sauce)

1/4  cup Butter (1/2 stick)
1/4  cup Flour
1 3/4  cups Milk (room temperature)
3/4  teaspoon Salt
1/4  teaspoon white Pepper
1/8  teaspoon Cayenne pepper (optional)
1/2  cup grated Parmesan cheese

In a medium sauce pan, melt butter (or margarine), over moderate-low heat. Stir in flour and cook 1 minute, Whisk in milk. Increase heat to moderate-high and cook - whisking constantly until mixture comes to a boil and thickens. Remove from heat and stir in seasonings and cheese. Cover and refrigerate.
